Ah-ha, it seems I can get new moisture mats (made to fit the Can 'o' Worms) from Wiggley Wigglers www.wigglywigglers.co.uk). They work out at a few pounds each.

Have followed Heather's advice (thank you Heather!) and added more cardboard but think that this might be a bit late for the moisture mat (which is starting to fall apart). Will look into getting a new one....

While there are worms being active in the top level, there seem to be quite a few still in the next level down. I have therefore decided to stop adding waste into the top layer for a while and to see how they get on, I'm hoping this will encourage (or enable!) the worms to get up to the upper most layer.

Feeling a little guilty about cold weather, have given the worms a handful of "worm treat" (it came with the Can 'o' Worms). Worm treat looks a bit like rabbit food (small pellets) and you soak it in water so it becomes moist, then add to the waste, it should encourage the worms up to the top level to "do their stuff".

Had a bit of a panic after seeing friends at the weekend who confessed that their worms had been killed off during a particularly severe frost. Checked on wormery as soon as we got back. There seems to be quite a bit of worm activity in level 3 (current top level) and level 2 just below it. However, short of digging around in the decomposing waste and bedding and doing a roll call, I'm not sure how to tell if they're all alright. No liquid in collector tray (level 1 ) yet (but I think it's a bit early for that.
